Potato and Ham Skillet

When you are staying home or self-quarantining, it's useful to have easy to make recipes on hand that use basic yet wholesome ingredients. This Potato and Ham skillet will tick that all-important box.

Ingredients:

4 cups potatoes (peeled, cubed and cooked)

2 cups fully-cooked ham (cut into cubes)

½ cup mayonnaise

¼ tsp salt

⅛ tsp freshly ground black pepper

2 cups part-skim mozzarella cheese (shredded)

Directions:

1. In a large-size skillet, combine the cooked cubes of potatoes with the ham and mayonnaise. Then, season the mixture with salt and black pepper.

2. Cook while stirring over moderate-low heat, until sufficiently cooked through.

3. Stir in the shredded cheese until melted. Serve.
